Rice & Veggie Bowl with Creamy Nori Sauce

It’s an overcast day in St. Louis. Truth be told this is my favorite kind of day. One of these days I will have a fireplace to cozy up to facing my kitchen while I cook. I envision the kids playing Monopoly and the dogs laying on their beds. Current reality is that Messi will be terrorizing the little dogs, the kids will be playing Roblox on their ipads, chatting each other up about making digital pizzas and whose going to give who a bonus for all of their digital pizza making hard work, and our cute, little electric fireplace will be chugging along, keeping us warm and glowing iridescent flames. It still feels quite cozy.

This is the kind of day that I want something warm, rich, and filling. The combo of the soft, warm rice, the sweetness of the sweet potatoes and the crunch of the broccoli is so satisfying, drizzled with the decadent Nori Cashew Cream.
This bowl is super versatile. You can use any veggies you have on hand. Other veggies that work really well are sautéed mushrooms and onions.
The kombu adds additional iron, iodine and soluble fiber.

Rice & Veggie Bowl with Creamy Nori Sauce

Ingredients

  • 1 Cup Brown Rice Cook to package instructions
  • 2 large Sweet Potatoes peeled & diced into bite size pieces
  • 1 head Broccoli Steamed
  • 1 small cut Kombu Optional

Nori Cashew Sauce

  • 1 cup Cashews
  • 1/4 cup Tamari/Soy Sauce
  • 1/2 tsp Garlic Powder
  • 1 Tbs Apple Cider Vinegar
  • 2 tsp lemon juice
  • 1/2 cup Water more or less for desired thickness
  • 1 sheet Nori

Instructions

  1. Cook Rice to Package instructions. Add Kombu for awesome extra added nutrients. Remove Kombu when rice is finished cooking

  2. Peel and dice sweet potatoes and boil until soft

  3. Steam broccoli until you can put a fork into it. (about 10 minutes) I like it firm, with a tiny bit of crunch.

Nori Cashew Sauce

  1. Add all ingredients to blender except nori sheet. Blend until smooth. Add more or less water to desired creaminess. If you soaked your cashews you will need less water. Add Nori sheet and blend until it is broken into tiny pieces.

  2. Layer it all together and enjoy!
