Pizza and Salad
I have a recipe that I use for a bread maker that I will share. If you do not have a bread maker, feel free to buy crust from the store. I love to use these reusable silicone mats instead of the waste of parchment paper.
Ingredients
Crust--adapted from Genius Kitchen
- 2 tsp Yeast
- 3 Cups Flour
- 1 Tsp Salt
- 2 Tbsp Sugar
- 2 Tbsp Olive Oil
- 1 Cup Water
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1 Tbsp Vegan Butter (optional) melted My favorite is Miyoko's sold at Trader Joe's
Sauce
- 1 jar Pizza Sauce
Cashew Cheese--adapted from It Doesn't Taste Like Chicken
- 1/2 Cup Cashews Raw or Roasted
- 1 Cup Water
- 3 Tbsp Tapioca Starch
- 1 Tbsp (Heaping) Nutritional Yeast
- 1/2 Tsp Salt
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
Instructions
Crust
-
Preheat oven to 400º.
-
Add all of the Crust ingredients into the bread machine. Set bread machine to dough setting. Once dough is ready, spread out with hands evenly on a rectangular cookie sheet with either parchment paper or these silicone sheets. Dust dough with butter.
Cheese
-
Nutritional Yeast can be purchased here.
Add all ingredients to blender. If you do not have a high speed blender you may need to soak cashews overnight. Once mixture is smooth, pour into a pan and cook on medium heat, stirring constantly. Cheese will start to coagulate and then will form a smooth stretchy texture.
-
Layer pizza sauce on top of dough. Spoon Cashew Cheese over tomato sauce, gently spreading with back of spoon. It does not have to be perfectly even. Bake at 400º for 20 minutes. Check crust for firmness and slight browning. May have to bake for additional 3 to 5 minutes depending on oven.
