Healthy Chocolate Covered Turtles

I have been vegetarian/vegan for the better part of 20+ years in the middle of America. It has been an interesting journey. Early on, I could look forward to family gatherings where my choices were jokingly ridiculed and I would constantly be asked where I get my protein, and why I eat plants if they are alive too. Anyone who as ever even dabbled in a meat free lifestyle, knows the drill.

In college, vegetarian meals in the dining hall consisted of french fries, cereal, and a condiment sandwich.

Once I graduated from college and had a kitchen of my own, experimenting with food became one of my favorite things to do. Hanging out with my then boyfriend, drinking a glass of wine, and chatting while chopping will always hold a warm place in my heart.

I love feeding people, but it’s always a little scary to feed meat eaters The friends who have stuck around tend to love what I make them. Providing cruelty free, healthy meals for friends and family feels so good to me.

I struggle to understand why with so many options these days, people still make the choice to eat animals. It is such a cruel industry. There are no regulations about how the animals are treated before they become food. Luckily, over the years, several friends and family members have stopped consuming meat. The world is changing. Each meal we eat is a choice. My hope is that the food that I and so many other vegan chefs offer will help people to look forward to eating animal free. One of the things I have missed most (besides ranch dressing) since going vegan is caramel candy. Especially chocolate turtles. Not only are these turtles cruelty free, they are amazing tasting, and healthy! What more can you ask for that guilt-free sweets!

I pretty much ate the entire batch in a day. I shared a few with the kids, but couldn’t help myself!

Healthy Chocolate Covered Turtles

Ingredients

  • 1 Cup Vegan Chocolate Chips
  • 1 Cup Pecans
  • 1 batch Date Caramel Link below

Recipe Notes

  1. Place parchment paper on a cookie sheet.
  2. Make the Date Caramel according to instructions here.
  3. Melt chocolate chips in a double broiler. 
  4. Lay pecans in threes.
  5. Scoop a tsp of date caramel on the pecans
  6. Pour chocolate over caramel and pecans. 
  7. Place in freezer.
