Folded Apple Crisp

My son was recently diagnosed with Oral Allergy Syndrome. This is a relatively benign allergic reaction in and around the mouth that can cause itching, sore throat, swelling of the tongue and hives. From my research and what the allergist said, it is not anaphylactic. (Sigh of relief). 

However, my already picky son just essentially had most of the fruits and veggies that he likes to eat, eliminated from his diet. Oral Allergy Syndrome is not an allergy to the actual fruit or vegetable, but to the pollen from Birch. In summary, people with Oral Allergy Syndrome always have seasonal allergies. As a side note, my son complained of a sore throat for months. I had him tested for everything under the sun with nothing turning up. I thought it was just another one of his tricks to not have to eat. The way we figured it out was that one day his sister told him to rub a soft fuzzy peach on his face and he broke out in hives. It finally clicked that this is what we were dealing with. 

The up side to all of this is that the reaction is only to raw fruits and veggies. Thus far, it's all my son's favorites: apples, peaches, carrots. Grrr. Once you cook the veggies though it transforms the proteins and the reaction does not happen anymore. 

Hence, this super easy and delicious Folded Apple Crisp!

Ingredients

  • 1 thin Tortilla
  • 2 tsp Maple Syrup more if you think it needs to be sweeter
  • 1 tsp Vegan Butter
  • 1 Apple thinly sliced, skin on if organic, peel of not.
  • 1/4 tsp Cinnamon
  • 2 tsp Hemp Seeds
  • 2 tsp Olive Oil
  • 1 Sprinkle Sugar

Instructions

  1. Melt butter in pan and add sliced apples. Cover pan and cook for 3 minutes. Add maple syrup and cover again cooking for another 5 minutes or until apples are soft but not mushy. Sprinkle apples with cinnamon and stir. 


    Place apples inside of Tortilla and fold over. Sprinkle apples with hemp seeds. Add olive oil to pan and let it heat for a minute. Cook each side until tortilla is browned and crispy. Sprinkle one cooked side with sugar (if desired) while the second side is cooking.
