Cranberry & Avocado with Pistachios & Balsamic Glaze

These are the perfect festive appetizers or sides for your Thanksgiving or Christmas meal! I love the pretty color contrast of the cranberries and avocados. This year we have two Thanksgivings to go to on Thanksgiving day. It has gotten much easier since the kids are older. I used to have a hard time toting them around and then keeping them up past their bed times–I’m kind of a stickler like that… but now, they love to see their cousins and play.

Cranberry & Avocado with Pistachios and Balsamic Glaze

Servings 8 4

Ingredients

Cranberry Sauce

  • 12 oz package Cranberries (frozen or fresh) equivalent to about 3.5 cups
  • 1 TBS Water
  • 1/2-1 cup Sugar I go with a 1/2 for this recipe because I like the Cranberry sauce to be more tart, but if you're using for straight Cranberry, I would increase sugar.
  • 1 heaping tsp Lemon Zest
  • 1/2 loaf French Bread
  • 1 Large Avocado
  • 1/2 Cup Pistachios
  • 1 Tbs Balsamic Glaze
  • 1 dash Salt

Instructions

Cranberry Sauce

  1. In a medium sauce pan add all Cranberry Sauce Ingredients.

  2. Bring to a boil.

  3. Reduce and simmer 10-15 minutes until all liquid is cooked off.

Slice Bread

  1. Slicing at an angle gives more surface area for the bread

Avocado

  1. Smash ripe avocado in a bowl with a fork.

Put it all together

  1. Spread avocado on bread slices

  2. Sprinkle Avocado with Salt

  3. Place a few cranberries on top of avocado

  4. Place pistachios on top of cranberries

  5. Drizzle with Balsamic Glaze

Recipe Notes

You can purchase the Balsamic Glaze from most stores. I got mine from Trader Joe's. Or you can order online 🙂 

One of these days I hope to host Thanksgiving. It’s hard for people to let go of the traditional dishes with animal products. I hope that over time, I can convince tastebuds that Thanksgiving can still be amazing tasting and cruelty free! Hope you enjoy these!
