Candied Apple Oatmeal

I tend to like savory or smoothies for breakfast, but every once in a while a sweet bowl of warm oatmeal is just what the cold morning calls for. Hanging with my hubby, my son and 3 dogs feels pretty perfect. We’re only missing Matilda as she is at a sleepover. I fully expected her to say that she didn’t want to go to the sleepover. She tends to get nervous over these things still. She’s approaching 10 years old and there is going to come a time when she always chooses the other thing to do. I’ll savor every moment that she wants to spend with us though. The house will be noisy and full of life when she gets home. She is a large presence in a tiny package and we couldn’t love her more!

I’m always trying to come up with recipes that my son will eat. As mentioned before he has oral allergy syndrome. This is a benign allergic reaction to the pollen that grows into some fruits and vegetables. It gives an itchy/painful throat, swollen mouth, hives, among other symptoms. Rarely does it cause anaphylaxis. Thank goodness. Here’s the good news: If you cook the fruits or veggies it distorts the proteins and the reaction doesn’t happen. Hence todays Candied Apple Oatmeal Bowl.

If it were for me I would not add the candy and would add walnuts. Walnuts are so good to me in oatmeal. They give it that perfect crunch. You can also replace the vegan candies with vegan chocolate chips.

Ingredients

Oatmeal

  • Gluten Free Oatmeal

Almond Butter Sauce--1 serving

  • 1 Tbsp Almond Butter
  • 1 tsp Maple Syrup
  • 1 tsp Plant Milk
  • 1 splash Vanilla Extract
  • 1 dash Cinnamon

Date Caramel--6 Servings

  • 1 cup Dates soaked
  • 2 tsp Chia seeds soaked
  • 1.5 Tbsp Maple Syrup
  • 1 splash Vanilla Extract
  • 1 dash Sea Salt

Apples--1 serving

  • 1 tsp Butter
  • 1/2 Apple
  • 1/2 tsp Maple Syrup
  • 1/4 tsp Cinnamon

Toppings

  • Cashews Chopped--I use a coffee grinder
  • Unreal Dark Chocolate Quinoa Bites
  • Hemp Seeds

Instructions

Oatmeal

  1. Cook oatmeal according to package instructions

Date Caramel

  1. Soak dates for at least an hour.

  2. Add all ingredients to blender

  3. Blend until smooth scraping down that sides.

Apples

  1. Melt butter in pan

  2. Add sliced apples

  3. Drizzle maple syrup and add cinnamon.

  4. Cook for 3 minutes. I like to keep a little crunch in the apples.

Throw it all together and add toppings! Enjoy!

  • How much water do the chia seeds need to soak in and for how long?

      Hi Nancy, I soak them with the dates 🙂 You can soak for an hour to overnight. It really depends on how wet the dates already are.
