Black Bean Crunch Wrap

I have this sweet 7 year old boy who is super picky. We’re working hard to put weight on him and keep him healthy. It is no small task. Any of you mamas out there who have picky kiddos totally understand. I never thought I would be one of those moms. My daughter is a healthy eater, will pretty much finish her food even when she’s not crazy about it. When you have a child with a combo of belly aches and apathy/anxiety about food in general, eating isn’t a priority. When we find something that he will eat, we go bananas. I can’t remember the last time he actually said he “liked” a food, but after jiu jitsu class the other night we stopped at Taco Bell for a black bean crunch wrap.

Friends, he was making ‘mmm’ noises while he was eating.

When I told him that I would try to make it at home, I think we both thought that it wouldn’t end well, as most other times I try to cook something other than a peanut butter pop for him he poo poos it. But, he loved it! He said it was even better than the Taco Bell Crunch Wrap. (Thank goodness). It’s super easy and so good. We love it with Cholula. We pretty much drink the stuff around here. Check out the video for folding instructions if you are unsure. Don’t forget to heat the tortilla to help make it a little more malleable so that it doesn’t tear.

Black Bean Crunch Wrap

This copy cat vegan Taco Bell Crunch Wrap is even better than the real thing.

Ingredients

  • 1.5 cups Black Beans (1 can)
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 2 Tbs Olive Oil
  • 1 head Iceberg or romaine lettuce finely chopped
  • 1 small Tomato diced
  • 1 medium Soft Tortilla
  • Tortilla Chips

Instructions

  1. Add entire can of black beans to a frying pan. If you are using self cooked beans, add a half cup of water to the pan.

  2. Cook beans over medium/high heat.

  3. Add chili powder and cumin

  4. Once all of the water cooks off, remove beans from heat. You do not want this to be runny as it will make the crunch wrap soggy.

  5. Heat olive oil in pan.

  6. Heat soft tortilla for 10 seconds in microwave. This will make it more malleable and less likely to tear.

  7. Spoon in this order: beans, chips, lettuce, tomato. Be sure your tomatoes aren't too juicy! Be sure not to overfill!

  8. Fold tortilla as shown in video.

  9. Hold crunch wrap together and cook folded side down first until brown. Flip and cook other side until brown.

Recipe Notes

Enjoy! Add salsa, Cholula, avocado, and cashew/sour cream if you'd like to adult it up a little. Let me know what you think!
