This is a ridiculously simple recipe, but I couldn't leave it off of the meal plan because it is my favorite. The very best way to serve is on a toasted crumpet from Trader Joe's, but plain toast or a bagel will do as well. It's amazing with a cup of tea or coffee. If you'd like a little more with breakfast, try the Potatoes from the Tofu and Potato Day 🙂
- 1/2 Avocado
- 1 slice Bread
- 1 dash Sea Salt
Toast bread. Smash avocado in a bowl. I am lazy and tend to just throw the half of an avocado on the toast, slice it with a knife all over and use the side of the knife to smash it down. Sprinkle with salt. Best if served while bread is still warm.
